Russian Sturgeon (acipenser gueldenstaedtii) originally native to the Black, Caspian and Sea of Azov.
The Russian Sturgeon is raised in farms at Thousand Island Lake which spans over 448km squared of fresh lake and forest
Most importantly the farm is proudly certified by the Friend of the Sea organization. It is the leading certification standard for respecting and protecting the marine environment and award’s sustainable practices in Fisheries and Aquaculture.
Roe is large and measuring 2.9mm to 3mm in diameter, melts on the palate and has a well balanced flavour with silky nutty notes and is favored in many Michelin Star Restaurants throughout Dubai and Asia.
The Caviar contains no preservatives and is unpasteurized.
